Method
- 1Lower the 8 eggs into boiling water and cook for 10 minutes. Immediately plunge into cold water, peel and cut in half lengthways. Remove the yolks and set aside in a bowl.💡 The whyCold water stops the cooking and prevents the greenish ring around the yolk. Let them cool fully before peeling.
- 2In a bowl, mix the egg yolk, Dijon mustard, a pinch of salt and a few drops of lemon juice. Add the sunflower oil in a very thin stream, whisking vigorously until the mayo is thick and firm.💡 The whyThe oil must go in very slowly at the start. Too fast and the mayo splits.
