Method
- 1Steam the potatoes for about 10 minutes (pressure cooker). Once cooked, peel and cut into generous slices.💡 The whyA pressure cooker halves the cooking time. Without one, boil the potatoes for 20-25 minutes.
- 2Make the dressing: mix the oil, vinegar, salt, pepper, sliced shallot and a few sprigs of parsley.💡 The whyWine vinegar, balsamic or cider: it doesn't matter, use what you have.
- 3Place the potatoes in a bowl, pour over the dressing and toss. Delicious warm or cold.
