# How to prepare a turnip

## The essentials

The turnip is cooked like the carrot: steamed, glazed in butter, or in a pot-au-feu. Small new turnips are mild and are eaten almost raw; the big winter ones need longer cooking.

## Choosing it

Firm, smooth, rather small, heavy for its size. A big spongy turnip is old.

## Preparing it

Cut both ends. Peel with a peeler, small new turnips just get scrubbed.

## Cutting it for the dish

- In wedges or rounds, for steaming or butter.
- In dice, for a soup or a stew.
- Whole if they are small.

## How long it takes

One minute.

## Storing it

In the fridge, two weeks, without the tops.
