# How to prepare a tomato

## The essentials

The tomato is eaten raw in summer and cooked all year round. Raw, everything depends on its ripeness; cooked, a good can beats a fresh winter tomato.

## Choosing it

Heavy, giving slightly under the finger without being soft, fragrant near the stem. A hard tomato with no smell will have no taste.

## Preparing it

Wash it and remove the stem with the tip of the knife. For a sauce, you can peel it: a cross cut on the bottom, thirty seconds in boiling water, then cold water, and the skin comes off with your fingers.

## Cutting it for the dish

- In wedges or slices, for a salad.
- In dice, for a sauce, a bruschetta or a pasta salad.
- Halved, to stuff it or roast it in the oven.

## How long it takes

One minute.

## Storing it

At room temperature, stem side down, three to five days. Not in the fridge, it loses its taste there, unless it is overripe. Cut, in the fridge, one day.
